Buttery Sweet or Savory Pull-Apart Bread

Pull-Apart Bread is the newest culinary star on the web. This yummy bread (or better cake) is a great holiday desert to share with friends and family, or a quick breakfast snack.

This is the classic recipe for Pull-Apart Bread, based on cinnamon and raisins, but this bread can be made chocolaty, nutty or savory (with cheese or herbs), however you it!

Recipe makes: One loaf of pull-apart bread, enough to serve from 8-10

Ingredients:
1 cup milk
1/4 cup canola oil
1/4 cup of white or brown sugar (and a tablespoon or more so on the side)
1 1/8 teaspoons of dry yeast
2 1/4 cups flour (all-purpose or whole wheat)
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon of salt
3/4 cup melted butter (about 96 grams)
1 1/2 tablespoons of ground cinnamon

Heat your oven to 180 degrees Celsius or 356 Fahrenheit.

Begin by pouring the milk into a small pot. Stir the milk occasionally and slowly add in the canola oil.

Then, while stirring, add the sugar in gradually.

Heat the pot on a medium to low heat until the mixture is hot, but not boiling. Once hot, remove the pot from the stove and let the mixture cool for a few minutes.

While the milk-oil-sugar mixture is still slightly warm, add in the dry yeast. Before completing this step, it is best to move the warm mixture to a larger mixing bowl.

Add 2 cups of flour and stir until all of the ingredients are well mixed together. Then, cover the bowl with plastic or a moist towel and leave the dough to rise for about an hour.

Once the dough has risen, add in the remaining 1/4 cups of flour, the baking soda, salt and mix well.

Lay the dough out on a floured surface and roll out the dough until it has a rectangular shape.

Spread the melted butter on the dough. Save a bit of the butter to grease the baking dish and add on top of the bread later.

In a small bowl, mix together the cinnamon with a bit of sugar and any other spices you might want to add to the bread (nutmeg also tastes great). At this point, you would also add the chocolate, cheese and herbs in a savory version, or some dried cranberries as pictured below.

Then, cut up the rectangular piece of dough into 6 strips (horizontally, along the long side). Stack these strips and then make 6 cuts into smaller squares.

Place these squares into a rectangular baking dish that has been lined with some of the melted butter.

Cover the baking dish one more time with a towel to allow the dough to rise for another 30 minutes.

Then, add a bit of melted butter and extra sugar to the top of the dough. Place the dish into the heated oven for about 30 minutes until the top turns golden brown.
